Pistachio Flour

Defatted pistachio flour is a great gluten-free ingredient and a real gourmet specialty. Unroasted pistachio kernels are defatted naturally - the oil is pressed out of them - and then ground into flour. The greenish-tinted pistachio flour can also be used as a base flour, for example for pancakes, pies, and butter cake dough, but it can also be mixed into smoothies, muesli, and oatmeal. It is an excellent source of protein, vitamins (A, B, C), minerals (calcium, phosphorus, potassium, iron, zinc, magnesium, manganese, selenium, fluorine, copper) and fiber.
